Weight Watchers Taco Soup Recipe

Weight Watchers Taco Soup
{Pin It}

Light and filling this version of taco soup is perfect for a hearty lunch or dinner. This weight watchers taco soup is roughly 6 points on the Weight Watchers scale, so it won’t break your healthy eating goals.

You can use a packet of low sodium taco seasoning or make it from scratch using the recipe below to add a fresher, brighter flavor. I love to add a dollop of cool sour cream to the top of a spicy soup to compliment the heat, nowadays I am substituting Greek yogurt for sour cream to save on fat and calories, boost the protein, and it really tastes the same. Add a sprig of fresh cilantro to brighten and you can sit down to a healthy and pretty bowl of soup.

I recommend using organic or natural, no salt added canned products.  You could also cook your own beans and skip the cans all together.  I make big batches of beans in the crock pot then throw them in the freezer. You can also use up garden fresh tomatoes if you have some on hand.

How to Plan a Weekly Menu {Money and Time Saving Tips}

Menu Planning Chart

It’s 5 o’clock. What’s for dinner?

Do you find yourself struggling for dinner ideas at the last minute or heading through the drive-through after work?  If you do, consider creating a menu plan to help take the stress out of mealtime.

Menu planning is preparing a written calendar of meals in advance. It can be as simple as writing down a dinner schedule for the week or as complex as including breakfast, lunch, and dinner for an entire month.  Whichever route you take, menu planning helps take the guesswork out of meals, which can be a huge time and money-saver.

Why should you plan a menu?

  • Eliminates the 5 pm, “what’s for dinner” question
  • Potential for more variety

Low Fat Fettuccine Alfredo Recipe

Low Fat Fettuccine Alfredo Recipe

One of my all time favorite foods is fettuccine alfredo, but it definitely doesn’t fit with my healthy eating plan. That’s why this low fat fettuccine alfredo recipe is perfect. Get the same great taste with less fat than traditional fettuccine alfredo recipes.

This skinny version has 400 calories per serving and 14.2g of fat. The average fettuccine Alfredo has about 800 calories and Olive Garden’s dish will have you on the treadmill even longer with about 1,220 calories!

Low Fat Fettuccine Alfredo Recipe:

Ingredients:

  1. 8 oz baby portabella mushrooms, sliced
  2. 1 head fresh or 1 package frozen broccoli florets

Quick Easy Biscuits

Quick Easy Biscuits

Most biscuit recipes call for lard and that is something that I just don’t have on hand on a day to day basis.  If you need a quick easy biscuit recipe that you can whip up fast and tastes delicious, this version uses butter and is a great go-to recipe for simple biscuits.

The key to a great texture is to use ice cold butter, and handle the dough as little as possible. Flaky and buttery these biscuits go well with a variety of dishes from sausage gravy at breakfast to fried chicken at night.

Quick Easy Biscuits:

Ingredients:

2 cups all-purpose flour
1 Tbsp. Baking Powder
4 Tbsp. Butter, cold
½ tsp. Salt
¾ cup whole milk

Weight Watchers Pumpkin Muffins

Weight Watchers Pumpkin Muffins

I love the flavor of pumpkin, and I really like that it is so good for you – those two things don’t always go hand in hand.

Pumpkin has fiber, antioxidants, beta carotene, iron, Vitamins A,C,K, and E. It makes for a great ingredient in many recipes, and it also keeps goodies moist instead of dry like many “healthy” recipes.  These Weight Watchers Pumpkin Muffins come in at right about 4 points.

Weight Watchers Pumpkin Muffins:

Weight Watchers Pumpkin Muffins Ingredients

1 cup canned Pumpkin
1 cup all-purpose flour

1 tsp. Pumpkin pie spice
1 tsp. Cinnamon

  1. Preheat oven to 400°.
  2. Line muffin tin with cupcake wrappers.

  4. In a separate bowl stir together; flours, cinnamon, baking soda, and salt.
  5. Add flour mixture to wet ingredients a little at a time until fully incorporated.
  6. Fill wrappers 2/3 of the way full.
  7. Bake for 20-23 minutes, or until a toothpick comes out clean when poked in the center.

Homemade Fruit Sorbet Recipe

Fruit Sorbet Recipe
{Pin It}

As temperatures start to warm up, this fresh fruit sorbet recipe will hit the spot. It is a great palette cleanser, a perfect light dessert, and much healthier than store bought. This literally tastes like biting int a fresh, ripe piece of fruit – but even better. PLUS you can feel good about giving this to the kids on a hot day over an unhealthy scoop of processed ice cream.

My favorite combination is Cantaloupe but you can also use; Honeydew, Watermelon, Peaches, Mango’s, or Strawberries. Use whatever is fresh and in season for optimum flavor.

Fruit Sorbet Recipe:

Ingredients:

2 cups fresh fruit
¼ cup coconut water
2 Tbsp. Lime juice
¼ cup granulated sugar
