Are you looking for a great dip to put out for the football game, bring to the next family get together, or at game night? This easy Guacamole Dip recipe is a perfect compliment to chips or for topping nachos or tacos. You can mix this by hand if you like a chunkier version, but I enjoy a smooth and creamy guac to dip my chips in (preferably lime Tostitos).

This will quickly become a party favorite and will put you at the top of the guest list every time (if you promise to make your homemade guacamole that is). Grab your ingredients and get ready to mix up a bowl of yummmmm!

Easy Guacamole Dip Recipe:

Easy Guacamole Dip Recipe 1

Ingredients:

1 large avocado
2 Tbsp. chopped cilantro
1⁄2 cup rotel diced tomatoes with chiles, drained
1⁄2 cup sour cream
1⁄2 finely diced onion
1⁄2 lime
2 cloves garlic, crushed
salt and pepper to taste

Directions:

  1. To slice avocado- slice avocado all the way around, twist, pull apart, and remove pit. Scoop out all inside green flesh and put into bowl of hand held or stand mixer- using the paddle
    attachment.
  2. Squeeze 1⁄2 lime into bowl.
  3. Stir in cilantro, sour cream, rotel, garlic and onion.
  4. Whip with mixer until smooth and creamy.
  5. Place in refrigerator for at least a half an hour before serving to allow flavors to combine.
  6. Top with a pinch of fresh cilantro before serving.

When it comes to cooking, one of my favorite things to make is a good casserole. I love how easy they are to throw together, and I love how you can prepare them ahead of time and then just stick them in the oven when you are ready. This really helps me find the time to cook when it is convenient for me, and I make casseroles a lot for this reason.

Sometimes I want something a little different than the usual casserole taste, however, and this recipe for Chicken Enchilada Casserole fits the bill perfectly. It’s got all the delicious flavors of my favorite Roasted Red Pepper and Chipotle Quesadilla recipe, but it’s a little more convenient to make because I can make it ahead of time, like I can with this Mexican Chicken in the Crockpot recipe.

Another thing I love about this Chicken Enchilada Casserole recipe is all the great ingredients! It has tons of yummy add-ins that my family loves, and I love how many good-for-you veggies you can squeeze into this one casserole! From peppers to onions to olives to jalapenos to corn–this recipe’s got it all! The way that the ingredients come together in this yummy casserole is truly phenomenal.

I don’t know about you, but I love cooking creamy casserole-style dishes, like Homemade Macaroni and Cheese or Chicken Broccoli and Rice Casserole. I love how versatile they are, how easy they are to throw together, and how convenient it is to prepare them ahead of time and then just toss them in the oven 30 minutes before dinner.

One thing I’ve noticed from preparing tons of these creamy casseroles is that almost all of them have one very important ingredient in common: Cream of Mushroom Soup. I can’t even tell you how many cans of this stuff I’ve gone through over the years–it’s in everything!

I used to have a fairly large stockpile of Cream of Mushroom soup, but since then, it has dwindled. That’s okay, though, because that made or the perfect opportunity to try making this Homemade Cream of Mushroom Recipe from scratch, and I’m so glad I did! This Homemade Cream of Mushroom Soup recipe offers the great taste you’re used to in your creamy casseroles, but it also offers so many other advantages as well. It’s easy and inexpensive to make, and it contains much better ingredients for you than store bought Cream of Mushroom Soup. Plus, you probably already have most all–if not all–of the ingredients on hand already.

The next time you go to make a recipe that calls for Cream of Mushroom Soup–whether you are making an old favorite or trying a new Thanksgiving Side Dishes recipe–and you see that you are out of it, don’t make an extra trip to the store. Use this Cream of Mushroom Soup recipe for a casserole that is easy, inexpensive and delicious!

 

Homemade Cream of Mushroom Soup Recipe

 

Easy Cream of Mushroom Recipe
(Yield equivalent of 2 cans)

INGREDIENTS
3/4 cup finely chopped Mushrooms
1/3 cup Flour
2/3 cup Milk
1 1/4 cup Vegetable Broth
1 tsp Onion Powder
1 tsp Garlic Powder
1/4 tsp Celery Salt
1/4 tsp Salt
1/4 tsp Pepper

DIRECTIONS

  1. Bring vegetable broth to a boil in a large pan.
  2. In a bowl, whisk together milk and flour until flour is dissolved.
  3. Add in remaining ingredients and continue whisking until incorporated.
  4. Add the milk/flour mixture to the broth, whisking to combine.
  5. Reduce heat to medium, allow to cook until thickened (3-5 minutes) stirring constantly.
  6. Remove from heat.
  7. Use immediately or store in airtight container in refrigerator.

Easy Candy Corn Cupcakes

Seeing candy corn arrive in stores is one of the signals that Fall has arrived and it’s almost time for Halloween.  Try this easy Candy Corn Cupcakes Recipe for a fun treat.

You can even purchase cute candy corn cupcake liners like the ones shown in the picture above.  The Dollar Tree is a great place to purchase Fall/Halloween inspired cupcake liners without breaking the bank.

Candy Corn Cupcakes:

Spice Cupcake Ingredients:

1 (15.25) box yellow cake mix
1 (3.4 ounce) box instant vanilla pudding mix
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
3/4 cup vegetable oil
3/4 cup sour cream
1/2 cup water
4 eggs
2 teaspoons vanilla extract

Cupcake Directions:

  1. Preheat the oven to 350-degrees.
  2. Line your muffin tin with papers and set aside.
  3. In a large mixing bowl, beat together the cake and pudding mixes with the sour cream oil, water, eggs and vanilla until well combined.
  4. Stir in the spices.
  5. Using a large cookie scoop, scoop the batter into the prepared muffin tin.
  6. Bake 18-22 minutes until a tester comes out clean.
  7. Let the cupcakes cool 10 minutes before removing them from the pan.
  8. Cool completely before frosting.

Frosting Ingredients:

8oz cream cheese
8oz butter
8 cups confectioners’ sugar
1 teaspoon vanilla extract
1/4 cup milk
Candy Corn Candies and Sprinkles for Decoration

Frosting Directions:

  1. Let the butter and cream cheese come to room temperature, before creaming together until smooth.
  2. Add the vanilla. Alternating the milk and sugar, beat in the remaining ingredients until smooth and thick.
  3. Pipe the frosting onto the cooled cupcakes.
  4. Decorate with Candy Corn and sprinkles.
  5. Refrigerate leftovers.

Makes about 24 cupcakes
