Seeing candy corn arrive in stores is one of the signals that Fall has arrived and it’s almost time for Halloween.  Try this easy Candy Corn Cupcakes Recipe for a fun treat.

You can even purchase cute candy corn cupcake liners like the ones shown in the picture above.  The Dollar Tree is a great place to purchase Fall/Halloween inspired cupcake liners without breaking the bank.

Candy Corn Cupcakes:

Spice Cupcake Ingredients:

1 (15.25) box yellow cake mix
1 (3.4 ounce) box instant vanilla pudding mix
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
3/4 cup vegetable oil
3/4 cup sour cream
1/2 cup water
4 eggs
2 teaspoons vanilla extract

Cupcake Directions:

  1. Preheat the oven to 350-degrees.
  2. Line your muffin tin with papers and set aside.
  3. In a large mixing bowl, beat together the cake and pudding mixes with the sour cream oil, water, eggs and vanilla until well combined.
  4. Stir in the spices.
  5. Using a large cookie scoop, scoop the batter into the prepared muffin tin.
  6. Bake 18-22 minutes until a tester comes out clean.
  7. Let the cupcakes cool 10 minutes before removing them from the pan.
  8. Cool completely before frosting.

Frosting Ingredients:

8oz cream cheese
8oz butter
8 cups confectioners’ sugar
1 teaspoon vanilla extract
1/4 cup milk
Candy Corn Candies and Sprinkles for Decoration

Frosting Directions:

  1. Let the butter and cream cheese come to room temperature, before creaming together until smooth.
  2. Add the vanilla. Alternating the milk and sugar, beat in the remaining ingredients until smooth and thick.
  3. Pipe the frosting onto the cooled cupcakes.
  4. Decorate with Candy Corn and sprinkles.
  5. Refrigerate leftovers.

Makes about 24 cupcakes

I love egg rolls, but it took me years before I actually enjoyed eating them.  I guess I was used to eating frozen egg rolls that frankly, weren’t that good.  Now I can make this Chicken Egg Rolls Recipe from home!  It’s simple to make and will be delish as is or dipped in duck sauce or soy sauce (my favorite.)

Light and filling this version of taco soup is perfect for a hearty lunch or dinner. This weight watchers taco soup is roughly 6 points on the Weight Watchers scale, so it won’t break your healthy eating goals.

You can use a packet of low sodium taco seasoning or make it from scratch using the recipe below to add a fresher, brighter flavor. I love to add a dollop of cool sour cream to the top of a spicy soup to compliment the heat, nowadays I am substituting Greek yogurt for sour cream to save on fat and calories, boost the protein, and it really tastes the same. Add a sprig of fresh cilantro to brighten and you can sit down to a healthy and pretty bowl of soup.

I recommend using organic or natural, no salt added canned products.  You could also cook your own beans and skip the cans all together.  I make big batches of beans in the crock pot then throw them in the freezer. You can also use up garden fresh tomatoes if you have some on hand.

One of my all time favorite foods is fettuccine alfredo, but it definitely doesn’t fit with my healthy eating plan. That’s why this low fat fettuccine alfredo recipe is perfect. Get the same great taste with less fat than traditional fettuccine alfredo recipes.

This skinny version has 400 calories per serving and 14.2g of fat. The average fettuccine Alfredo has about 800 calories and Olive Garden’s dish will have you on the treadmill even longer with about 1,220 calories!

Low Fat Fettuccine Alfredo Recipe:

Makes 8 servings

  1. 8 oz baby portabella mushrooms, sliced
  2. 1 head fresh or 1 package frozen broccoli florets
  3. 1 box of fettuccine
  1. 4 oz. 1/3 less fat cream cheese or neufatchel cheese (next to cream cheese)
  2. 2 cups skim milk
  3. 1 cup Parmesan cheese, grated
  4. 1 tsp salt
  5. 1 TBS butter
  6. 2 TBS flour
  7. Non stick pan spray
  8. 4-5 cloves garlic, minced
  9. black or white pepper (to taste)

Most biscuit recipes call for lard and that is something that I just don’t have on hand on a day to day basis.  If you need a quick easy biscuit recipe that you can whip up fast and tastes delicious, this version uses butter and is a great go-to recipe for simple biscuits.

The key to a great texture is to use ice cold butter, and handle the dough as little as possible. Flaky and buttery these biscuits go well with a variety of dishes from sausage gravy at breakfast to fried chicken at night.

Quick Easy Biscuits:


2 cups all-purpose flour
1 Tbsp. Baking Powder
4 Tbsp. Butter, cold
½ tsp. Salt
¾ cup whole milk
