Menu Plan Monday (06/20)

I’m hoping things slow down a bit this week.  Schools out and Monkey’s big birthday weekend is behind us.  I hope to get some freezer cooking done this week too.  The kids love to help cook, so I’m thinking it could help keep them busy.   We’ll see if it actually happens. 

Monday
Beef and potatoes from freezer with garden salad

Tuesday
Burgers and hotdogs leftover from Monkey’s party

Wednesday
Egg Quiche with fresh blueberries (didn’t make last week)

Thursday
BBQ pork from freezer with sweet potato fries

Friday
Chicken wings on grill with rice and zucchini

Saturday
Our Anniversary – out to dinner

Sunday
Hubby’s choice

Freezer plans
Banana Bread – bought organic reduce bananas (make Monday)
Granola Bars (Make Thursday)
Black Bean and Chicken Burritos – cooked black beans last week (Monday)

Frugal Eats: Chicken Wraps

Budget Savvy Diva has put together another Frugal recipe for you.  Each week, she’ll share a recipe a family of 4 can make for $5 or less.

This week is Easy Chicken Wraps

Ingredients:
1 pkg. tortillas
2-3 fresh tomatoes
1 bottle ranch dressing
1 jar hot wing sauce (mild or hot)
1 pkg. breaded or plain chicken breast (you can also use fresh chicken breast, breaded and fried–or grilled–however I think it costs more and takes much longer)

Directions:
Cook chicken as directed on package then cut into slices. Heat tortillas in the microwave (quickest). Place tortilla on plate, add chicken, tomatoes, wing sauce and ranch dressing. Wrap and enjoy!

You can mix and match your toppings to suit you.

*I would use crockpot chicken or leftover chicken to make this for even less.

I’ve been spending WAY too much money eating out these past couple of weeks.  I got lazy and didn’t do much cooking.  It’s time to reign in the budget again and get back into the kitchen. 

I had a bunch of free egg coupons from Target, so I’ll be using some of those up this week.  The boys are having egg salad for lunch this week too.

Turkey Burgers with fries

Wednesday
Italian Chicken Pasta Toss with bread from breadmachine

Thursday
Chicken stir-fry using leftover crockpot chicken from freezer

Friday
Leftovers – heading to a Tides game

Saturday
Monkey’s b-day sleepover = Pizza

Sunday
Possibly having family over to celebrate Monkey’s birthday

Frugal Eats: Vanilla Apple Crisp

Budget Savvy Diva has put together another Frugal recipe for you.  Each week, she’ll share a recipe a family of 4 can make for $5 or less.

Ingredients:

6 large apples, cored and sliced (golden delicious or granny smith are a great choice)
1/2 c. orange juice
1 c. sugar
1/2 tsp. cinnamon
1/4 tsp. salt
3/4 c. flour\
6 T. butter or margarine

Directions:

Stir orange juice over apple slices and coat well. Arrange apples in a greased baking dish.
Combine 1/2 c. of sugar and the cinnamon, sprinkle over the apples.
Then combine remaining sugar with flour and salt, and cut in butter until mixture becomes crumbly.
Spread crumb mixture over apples and bake at 350 degrees for 45 minutes or until apples are tender and topping is lightly browned.
Serve warm. (This is also really great with a scoop of vanilla ice cream!)

Ham and Swiss Crescent Braid Recipe

This is one of Derrick’s favorite meals.  I’ve been making it since the Pillsbury cookbook came out in 2001!
I like to use ham from the freezer.  When I get a good deal on a bone-in ham, I’ll shred the leftovers and freeze in meal size portions.  I’m able to make this fairly inexpensively since I’m using frozen ham, I omit the almonds and most of the other ingredients I usually already have on hand.
INGREDIENTS

3/4 lb cooked ham, chopped (2 1/4 cups)
1 cup Green Giant® Select® frozen broccoli florets, thawed
1 cup shredded Swiss cheese (4 oz)
1 jar (4.5 oz) Green Giant® sliced mushrooms, drained
1/2 cup mayonnaise or salad dressing
1 tablespoon honey mustard
2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls or 2 cans (8 oz each) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
1 egg white, beaten
2 tablespoons slivered almonds

Hubby’s Cub Scouts Cake – Let’s Go Camping!

My hubby is amazing!  Why?  Look at this fantastic cake he made with Monkey Boy for a Cub Scout Bake-Off!  Dad’s and Scouts were asked to make a cake to be judged at their recent Pack Meeting.  Participation was voluntary, but hubby knew how much this would mean to Monkey.  They even placed!

We brainstormed together, but that was the end of my involvement.  All the credit goes to the 2 men in my life.

Pretzel tepee, jelly bean and tootsie roll camp fire with tootsie roll logs.  Don’t forget the chocolate goldfish in the water!

Everything on the cake is edible except for the 2 little bean guys (Monkey wanted Scouts on the cake). 

The final product

Monkey had so much fun making this cake with his daddy!  I know there are cake masters out there, but I think it’s pretty good for amateurs
