Stuffed Cabbage Recipe

I really wish I was a better food photographer! 

Here is a little more information about me, I’m Polish.  Well, part Polish anyways.  Stuffed Cabbages or gołąbki was my dad’s FAVORITE meal!  If you’re looking for a healthy dish, this is NOT a recipe for you.  I only serve it a few times a year.  I didn’t like it growing up, but I enjoy eating it now.  Derrick and the kids love this dish and request it often!

Ingredients:

1 Cabbage
1 package of lean ground beef
1/2 Cup rice
1 Onion
1 Green pepper
3 Cans tomato soup
1 Package of Bacon
S/P

Directions:

1.  Preheat oven to 350 degrees
2.  Cook Rice according to package directions
3.  Chop and saute onion and green pepper
4.  Boil Cabbage for approximately 5 Minutes (until bendy)
5.  Mix uncooked beef, rice, onions, peppers and S/P in large bowl
6.  Carefully peel cooled cabbage leaves (may tear)

7.  Spoon meat mixture into cabbage leaf
8.  Fold stem side up
9.  Fold Top to Stem
10.  Fold sides in
11.  Place folded sides down in large pan (I use roaster pan)
12.  Pour on 3 cans of tomato soup and 1 can of water (not shown)
13.  Place Bacon on top-this is 1/2 lb

14.  Bake for 1 – 1 1/2 hours

Enjoy!
This also freezes pretty well.

I finally organized my inside freezer, so I’m working on serving some of the food I found.  I’ll be out late Wednesday, so Derrick will be cooking dinner for the kids, hopefully.

Dinner with friends

Mahi on Grill with rice and veggies in grill basket

August Freezer Cooking Day Results

I forgot to add the granola to the picture

I need to add more dinners into the mix, so I might do some more cooking later in the week.  This is everything I’ve made from my plan so far.

3 1/2 “cans” of refried beans (in the containers)
11 “cans” of cooked pinto beans (cooked in crock pot)-too many I think 🙂
Banana Nut Muffins
Chewy Granola Bars with nuts and chocolate chips
Homemade Taco Seasoning
2 meals of Chicken and Black Bean Burritos

My Muffin Assistant

I didn’t make my burger patties for the freezer yet.  We’re having my husband’s grandparents over for burgers on Saturday, so I figure I’ll make a quadruple batch then.  I’m not exactly sure of the recipe I made up last time.  I’ll update with a separate recipe post this weekend.

Possibly my Burger Recipe:
~2 lbs lean ground beef
1 egg
¾ cup bread crumbs
2 Tbsp Worcestershire sauce
2 gloves garlic, minced
1 small onion, finely chopped
s/p to taste
(Did I add Olive Oil?)

Chicken and Black Bean Burritos

I like having burritos in the freezer because they make such a quick and easy meal.  We either eat them for dinner or when the kids want something different for lunch.

Ingredients
Shredded Chicken
Cooked Black Beans (mine were from freezer)
Shredded Cheese (I used cheddar)
Salsa
Burrito Size Tortillas

*I used lots of beans and a little bit of chicken

Combine all ingredients on tortilla shells
Form into burritos
Freeze

You can either thaw before cooking or take them straight from the freezer to the oven or microwave.

I ate one for lunch yesterday and it was yummy!

*UPDATE*

Froze well just in a gallon Ziploc bag.  If you’re freezing for longer than a month, I’d suggest wrapping in foil

August Freezer Cooking Day Plan

I’m getting ready to do a small Freezer Cooking Day.  I need to organize my inside freezer, so space is limited.  If we can find a good deal, Derrick has agreed it’s time for a garage freezer.  We already have the fridge/freezer, but we’ll be adding a much needed stand alone freezer in the garage too.  It’s about time.  That extra grocery money has been burning a whole in my pocket!

Refried Beans
Cooked Pinto Beans
Chewy Granola Bars
Chicken, black bean (I think) and cheese burritos
Burgers for the grill-will mix and make into patties.  (recipe to follow)
Banana Nut Muffins
Homemade Taco Seasoning

I’d like to add in 1 or 2 more items-I need to search through the other link ups for more ideas.  I’ll let you know when I post my results
