Sloppy Joe’s Pocket Sandwiches-Pampered Chef Recipe

The following recipe is from The Pampered Chef Casual Cooking Cookbook.  This cookbook has been discontinued, but you can purchase it at the online outlet for $6 HERE.
Make-Ahead Seasoned Ground Beef
2 lbs lean ground beef (I use ground turkey)
1/2 cup chopped onion
1 garlic clove, pressed
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 cans (8 oz each) tomato sauce

Cook and drain beef, breaking into crumbles
Add onion, garlic, S/P and cook 1-2 min. until onion is tender
Stir in tomato sauce
Use 1/2 mixture for sloppy Joe’s and freeze or refrigerate (up to 2 days) other 1/2 of mixture.

Sloppy Joe’s Pocket Sandwiches
1/2 recipe Prepared Make-Ahead Beef
2 tablespoons ketchup
1 tablespoon packed brown sugar
2 teaspoons prepared mustard
1/2 teaspoon ground all spice (optional)
Pita pockets or kaiser rolls

Heat meat mixture and additional ingredients
Spoon into pitas or on kaiser rolls
Top with cheese (optional)

My kids and hubby LOVED this!

Everything I want to make includes using the grill.  Problem:  My grill is broken-burners are rusted!  My dinner plans are foiled until I can research and buy a new gas grill.  This is what I came up with instead:

Monday
Nachos with ground turkey

Tuesday
Pasta from freezer-didn’t really like the first time but need to use it

Wednesday
Sloppy Joe’s from freezer (PC recipe) on kaiser rolls with noodles-didn’t make last week

Thursday
Indian-Spiced Chicken with Wild Rice

Friday
Leftovers

Saturday
Greek Fest (post details for locals)

Sunday
Stirfry

April Freezer Cooking Day Results

I’ve finally finished up most of what I wanted to get done for Freezer Cooking Day.  I didn’t get around to the banana bread, but I’ll do that sometime this week.

3 Dinners of Brown Bag Burritos
1 1/2 Cans of Refried Beans (used 2 can’s in burritos)
2 Mexican Chicken and Rice Casserole (not liking this for freezer cooking day)
2 Chicken Baked Ziti
2 More Breakfast of Pancakes
Bacon (not in picture)

April Freezer Cooking Day Plan

I’m hoping to fit Freezer Cooking Day around my crazy schedule this weekend.  I made Crock pot Chicken the other day, so I’ll use some of that for 2 meals.  I made Brown Bag burritos last Freezer Cooking Day and my family enjoyed them plus “Moneyboy” even requested them as an after school snack.  I was able to pull 1 out of the freezer, throw it in the oven and dinner or snack was served.

Pancakes
Bacon (some of breakfast today and tomorrow then freeze for quiche)
Refried Beans
Brown Bag Burritos
Chicken Baked Ziti (X2)
Mexican Chicken and Rice Casserole (recipe to follow)
Banana Bread

I completely forgot to take the chicken out of the freezer to make crock pot chicken on Sunday.  Opps!  Hubby was happy because we picked up his favorite pizza instead.
