Freezer Cooking Day-February Results

This was my First time participating in Freezer Cooking Day! I spread it out over a few days in an attempt to “get my feet wet”. I didn’t end up with as much as I’d planned due to a snowstorm (more time playing outside with the kids) and my birthday present from hubby was an over-the-range microwave! When my house was built that type of microwave didn’t exist, so it took about an entire day of removing the old and adding a new cabinet, running electrical, and reworking the vent but it was worth it. I am blessed to have such a wonderful husband!

Okay back to cooking, I ended up with:
6 bags of cooked pinto beans
2 bags of Shredded Beef
1 Baked Ziti
Bag of chocolate chip pancakes (multiple breakfasts)
2 pans Freezer Mashed Potatoes
2 bags of Red Potatoes (same concept as above but with butter and parsley)

We had more but we ate 1 of the ziti, shredded beef, and both types of potatoes and some pancakes. Why all the potatoes? They were on sale for $0.99 a bag last week at Farm Fresh! I also plan to make spaghetti with meatballs tonight and freeze ½, and when I make Drop Biscuits later in the week I’ll mix up a few extra dry ingredients to have on hand.

I plan to post my easy ziti receipt and spaghetti recipe later today or tomorrow. We still have snow to play in 🙂 DONE!
