Take a simple recipe for banana muffins and add a twist by making popovers!  This is the same recipe for muffins but cooked in a popover pan.   Don’t have a Popover Pan?  You can buy one HERE or just use this recipe to make muffins.

The caramel icing topping adds a fun sweetness to the muffins that can be omitted if you prefer.

Recipe for Banana Muffins as a Popover:

Ingredients:

4 Ripe bananas
1 2/3 Cups of sugar
2/3 Cup vegetable oil
2 1/2 Teaspoons vanilla
4 eggs at room temperature
3 1/4 Cups All-purpose flour
1 Tablespoon baking powder
1 pinch of salt
1 1/4 Teaspoons cinnamon
Hershey’s Caramel Topping
1/2 Cup Vanilla icing, melted

-15

Directions:

  1. Heat oven to 350 degrees
  2. Use butter or anti stick cooking spray to well grease your popover pan.
  3. Cream together bananas, sugar, oil and vanilla.
  4. Add eggs one at a time to mixture.
  5. Mix dry ingredients flour, baking powder, salt and cinnamon in a separate bowl.
  6. Slowly add the dry ingredient mixture making sure to blend well before adding more.
  7. Once all ingredients are completely blended together fill your popover pan 3/4 full.
  8. Bake for 50-60 minutes or until inserted toothpick comes out clean.

Makes 12-14 popovers

To prepare the glaze:
Use your favorite vanilla frosting (I used Betty Crocker Whipped butter cream), 1/2 cup melted in the microwave for 20 seconds and mixed well until smooth and silky.  Drizzle glaze over popovers then drizzle Caramel Topping over popovers to finish it off.  YUM!

***Keeping your ingredients warm to room temperature is key.
