Frugal Eats: Grilled Chicken with Soy Sauce Infused Veggies & Mushroom Risotto

Budget Savvy Diva has put together another Frugal recipe for you.  Each week, she’ll share a recipe a family of 4 can make for $5 or less.

This week of frugal eats I wanted to focus on using “what you have” to make a good tasting and happy wallet meal. This type of planning can really help save money because instead of having to go to the store to purchase items for dinner – you can can take a little from here and there and put together a meal for around $5.00. So I looked around and came up with these three items:

1/2 of Tyson Chicken Strips – 1.50 – the other half was used -in this recipe: Frugal Eats” Pasta with a Homemade Tomato Sauce ( Green Beans and Broccoli ) with Grilled Chicken Breast – and Homemade Garlic Bread
1 box of mushroom risotto – 1.99
Bad of Veggie with Soy Sauce – 2.50

Farm Fresh Meal Idea: Strawberry Spinach Salad Recipe

Do you want to try the best EVER salad?  You will literally want to lick the bowl after you try this recipe.  It is not a frugal recipe, but I love serving it when I can get all the ingredients on sale.  This salad pairs nicely with fresh fish.

Strawberry Spinach Salad

Dressing:
1 lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil

Salad:
1/4 cup sliced almonds, toasted
1 1/2 cups strawberries,  quartered
1/2 medium cucumber, sliced and cut in half
1/4 small red onion, sliced into thin wedges
1 (6 ounce) package baby spinach

Harris Teeter Meal Idea: Crockpot BBQ Chicken with Asparagus

I LOVE my crockpot!  Mom on Dealz has put together a delicious & easy recipe based on the 02/23 Harris Teeter sale ad. The sale ends Tuesday evening.

Crockpot BBQ Chicken with Asparagus and Rice


Ingredients:

-Harris Teeter Whole Fryer Chicken-$0.59 lb-I got one for $3.09
-Harris Teeter Asparagus $1.79
-Kraft BBQ Sauce $1
-Uncle Ben’s Ready Rice 3/$5-$1 coupon from 2/20 RP=$0.67
-2 tablespoons butter or margarine (assume on hand)
-Garlic powder or chopped garlic (whichever you have on hand)
Final cost of meal=$6.55

Directions:

1. Clean chicken and place in crockpot legs up.
2. Pour entire bottle of BBQ over chicken and cook on low 8-10 hours.
3. Cook rice according to directions and set aside.
4. Melt butter in sauce pan and add garlic and asparagus. Cook to your desired tenderness.
5. Serve asparagus over rice alongside chicken.

Here is me with the pasta – costing 1.50 for the pound. I love getting pasta with the ridges really helps soak up all the yummy sauce.

Menu Plan Monday (02/21)

Confession:  I ruined my turkey. 
Life took over and I didn’t end up with a good day to cook it last week.  I HAD to cook it Saturday but it wasn’t done before we went to my son’s cub scouts banquet & I had no idea how long we would be there.  My “solution” turn the oven down so it would finish cooking with out burning.  Nope, the middle didn’t cook & the outside was overcooked.  Lesson learned.

My weekend menu is up in the air as we are trying to determine our plans

Roast with Carrots, Potatoes & mushrooms in crockpot

Farm Fresh Meal Idea: Mushroom & Swiss Chicken

I think I’ll be making a similar dish soon!  This weeks recipe prices are based on the 02/16 Farm Fresh weekly ad.

Mushroom & Swiss Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 package of fresh mushrooms, sliced
  • Swiss cheese slices (or shredded)
  • 2 cloves garlic, minced
  • 3-4 Tbsp olive oil
  • 3-4 Tbsp red wine vinegar
  • 1 Tbsp Cajun seasoning (or similar)
  • Onion slices
  • S/P

Directions

  1. Preheat oven to 350° F
  2. Combine oil and garlic in a baking dish with chicken.  Coat well.  Sprinkle with the vinegar, S/P and Cajun seasoning.
  3. Bake 350° F for 30 minutes.
  4. Remove chicken from oven.  Cover chicken with onion and mushroom slices, add more oil and vinegar and return dish to oven for 15 to 20 minutes.
  5. Remove from oven and immediately place 1 slice of cheese on top of each chicken breast. 

Could serve with Betty Crocker Pouch Potatoes $1 and Richfood Frozen Vegetables $1

Prices
Richfood Swiss Cheese $2.19 ( $1.10)
Mushrooms $0.99
Green Onion $0.79 ($0.40)
Perdue Perfect Portions $5.99
$2/1 printable
Final: $3.99

Total: $6.48 + $2 for sides
