Harris Teeter Meal Idea: Mango Chicken

Mom on Dealz has put together your weekly recipe based on the 03/16 Harris Teeter sale ad.

Ingredients:
3.5 pounds Split Chicken Breast $3.46
1 mango (peeled, seeded, and sliced) $0.99
2 cups Simply Orange Juice $1.50
1 tablespoon Kikkoman soy sauce $1.45
Harris Teeter Zatarain’s Wild Brown Rice Mix $1.55
2 tablespoons HT cornstarch $0.97
1 tablespoon olive oil ( assume on hand)
1/4 cup hot water
Total: $9.87

Directions:

1. Prepare rice according to directions.
2. Brown chicken in oil.
3. Add orange juice and soy sauce; bring to a boil.
4. Add mango pieces and simmer 2-3 minutes.
5. Combine hot water and cornstarch and whisk until dissolved. Add to pan.
6. Continue cooking until sauce thickens, stirring frequently.
7. Serve over prepared rice.

Farm Fresh Meal Idea: Diana’s Chicken Thighs with Honey & Soy Sauce

This is a meal that my mother-in-law makes.  I think it is a frugal dish because I always (okay, almost always) have these ingredients on hand. 

The Farm Fresh 03/16 weekly ad has Perdue Boneless Skinless Chicken breasts on sale for $1.99lb.  I typically purchase the bone-in, skin-on thighs because it is significantly cheaper and it only takes a few minutes to remove the skin.  There is something to be said for convenience though!

Diana’s Chicken Thighs with Honey & Soy Sauce

Serve with rice and carrots

Price for chicken $3.16
*Assuming all other ingredients on hand
Richfood Instant Rice $1.79
Baby Carrots $0.99

Total cost: $5.94
*When I made this, I served with free rice and $0.33 corn = $3.52

Ingredients
4-6 Chicken thighs
1/4 Cup honey
2 Tbsp Soy Sauce
2 Tbsp Lemon juice
2 Tbsp Melted butter or margarine
1 Egg Yolk

Directions
1. Preheat over to 400°F and grease or spray baking dish
2. Mix all ingredients in bowl
3. Roll chicken in mixture and place in prepared dish.  Pour remaining mixture over chicken
4. Bone-in: Bake 30-35 min, flip and bake another 30-35 min. or until done
     Boneless: Bake  20 min, flip and bake another 20 min. or until done

Farm Fresh Meal Idea: Organic Chicken and Pinto Bean Nachos

I noticed a ton of organic sales this week, so I thought I’d try to put together meals using organic ingredients for this weeks Farm Fresh meal idea.

Prices are based on the 03/09 Farm Fresh weekly ad.

Ingredients:
Culinary Circle Rotisserie Chicken $6.99
Wild Harvest organic Tortilla Chips $1.79
Wild Harvest organic Pinto Beans $1.50
Wild Harvest organic Salsa $2.59
Wild Harvest organic Soup $1.99
Richfood Cheese $2 (didn’t see organic)
Taco Seasoning mix (I make my own)

Chicken & Pinto Bean Nachos

1. Shred part of the Rotisserie chicken.  Heat shredded chicken & mix with taco seasoning.  Add pinto beans and salsa & cook over medium heat until cooked through. 

2. Meanwhile, spread ~1/2 bag of tortilla chips on platter, add approx. 1/2 meat mixture on chips and sprinkle with cheese.  Layer remaining chips, meat mixture and cheese. 

3. Top with lettuce, tomatoes, olives, sour cream or other toppings as desired

For dinner the next night:

Soup and sandwich

Serve sliced Rotisserie chicken on sandwiches with organic soup. 
*Could use Kraft sandwich shop may for $1.89 (not organic) with remaining lettuce from nachos

Cost: $16.86 for 2 meals plus cost of toppings

Don’t want chicken?  Ground Beef is on sale for $2.49lb
*I personal use ground turkey for my nachos

Harris Teeter Meal Idea: Colcannon For St. Patrick’s Day

Mom on Dealz has put together your weekly recipe based on the 03/08 Harris Teeter sale ad.

We serve this as a side dish each year but you can add corned beef to it to make it a meal for $2.99 more!

Ingredients:

3 lb potatoes $3.97 (on sale for 8 pounds)
1 lb shredded cabbage $0.79 (on sale $2.37/3 pounds)
3 tablespoons butter (assume you have on hand)
1 1/4 cup milk $2.89
pepper to taste (assume on hand)
1/2 cup thinly sliced onion $0.47

Total=$8.12 ( a little high but you will have a lot of potatoes and milk left over)


Directions
:
1. Cut potatoes into small pieces and boil until tender. Set aside.
2. Heat butter and onion over medium heat in skillet. Add cabbage and cook until cabbage starts to brown.
3. Reduce heat to low, add milk and pepper. Cover and cook until cabbage becomes tender.
4. Combine potatoes and cabbage/onion and mash.
