Whether you are watching your waistline or just want a delicious breakfast, these tempting jars of Apple Cinnamon Baked Weight Watchers Oatmeal are a filling and healthy choice for a quick breakfast. I chose ingredients that are known for their weight loss or health benefits. The three main ingredients pack a healthy punch that makes this a perfect breakfast choice.

Cinnamon is known to help control blood sugar levels, aid in weight loss, prevent stomach bugs (cinnamon is highly anti- bacterial), as well as aid in alertness and memory. Apples provide soluble fiber and regulate your blood sugar. While oatmeal is filling and is another excellent source of fiber that also helps control blood sugar. Aside from all the health benefits this baked oatmeal is simply fabulous!

Weight Watchers Banana Bread Recipe

One of the things I always miss when trying to eat healthy are sweets. This weight watchers banana bread recipe is only 1 PointsPlus per mini muffin or 3 PointPoints per slice.  It fits right into my daily point allowance and is truly the perfect treat to satisfy that craving I have. Not only is it full of potassium and fiber thanks to the bananas, but it is amazingly moist and so much like a traditional Banana Bread that you won’t be able to tell that it is actually lower in fat and calories.

Weight Watchers Banana Bread Recipe:

INGREDIENTS

3 Ripe Bananas Mashed
¼ Cup Coconut Oil
1 Cup Splenda
1 Cup All Purpose Flour (sifted)
1 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract

A sweet and tasty summer treat, this Weight Watchers Strawberry Pie is a yummy and low calorie way to indulge your sweet tooth. Fresh, light strawberries, tangy jello, and creamy pudding combine to create a filling that satisfies cravings, but is more forgiving of your waistline than most desserts.  This pie is 3 PointsPlus per slice.

Try other variations such as chocolate for the pudding, or make it with different berries like raspberries, blueberries, or blackberries and the same flavor of sugar free Jello.  To lighten it up even more, pour filling directly into a pie pan and skip the crust.

Light and filling this version of taco soup is perfect for a hearty lunch or dinner. This weight watchers taco soup is 4 PointsPlus per serving, so it won’t break your healthy eating goals.

You can use a packet of low sodium taco seasoning or make it from scratch using the recipe below to add a fresher, brighter flavor. I love to add a dollop of cool sour cream to the top of a spicy soup to compliment the heat, nowadays I am substituting Greek yogurt for sour cream to save on fat and calories, boost the protein, and it really tastes the same. Add a sprig of fresh cilantro to brighten and you can sit down to a healthy and pretty bowl of soup.

I recommend using organic or natural, no salt added canned products.  You could also cook your own beans and skip the cans all together.  I make big batches of beans in the crock pot then throw them in the freezer. You can also use up garden fresh tomatoes if you have some on hand.

I love the flavor of pumpkin, and I really like that it is so good for you – those two things don’t always go hand in hand.

Pumpkin has fiber, antioxidants, beta carotene, iron, Vitamins A,C,K, and E. It makes for a great ingredient in many recipes, and it also keeps goodies moist instead of dry like many “healthy” recipes.  These Weight Watchers Pumpkin Muffins come in at right about 4 PointsPlus per muffin.

Weight Watchers Pumpkin Muffins:

Weight Watchers Pumpkin Muffins Ingredients

Ingredients:

1 cup canned Pumpkin
1 cup all-purpose flour
1 cup whole wheat flour
2/3 cup unsweetened applesauce
2/3 cup brown sugar
2/3 cup skim or 2% milk
1 tsp. Pumpkin pie spice
1 tsp. Cinnamon
1 Tsp. Baking Soda
½ tsp. Salt
2 eggs

Directions:

  1. Preheat oven to 400°.
  2. Line muffin tin with cupcake wrappers.
  3. Beat applesauce, brown sugar, milk and eggs in a medium bowl until well combined.
  4. In a separate bowl stir together; flours, cinnamon, baking soda, and salt.
  5. Add flour mixture to wet ingredients a little at a time until fully incorporated.
  6. Fill wrappers 2/3 of the way full.
  7. Bake for 20-23 minutes, or until a toothpick comes out clean when poked in the center.

Serving size = 12 muffins

Weight Watchers Points:

  • Total recipe = 71 SmartPoints and 48 PointsPlus
  • 6 SmartPoints per muffin
  • 4 PointsPlus per muffin
  • 4 WW points per muffin (old system)
