My experience with the four S’s:

1. Swirl – I swirled a tablespoon of the olive oil in a small clear glass.  I didn’t have a blue glass which is customary for master testers in Italy.  I found it interesting that color isn’t an indicator of quality and is the reason behind using a blue glass.  Fascinating! 
2. Sniff –  The aroma seemed subtle and not intense.
3. Slurp – The taste was smooth and possibly a little fruity.
4. Swallow – The oil did not leave an aftertaste.  However, I did notice a peppery sensation in my throat.
