Farm Fresh Meal Ideas: London Broil & Creamy Potato Soup

Mom on Dealz & I are trying out providing you with weekly recipes based on the sale ads for local stores.  The following recipes are based on the Farm Fresh sale ad for the week of 01/19/11.  Remember that some of the ingredients listed you may already have in your stockpile, so the cost for the meal would be less. 

This was honestly very difficult for me because I cook first based on what I have, then based on the sale ad.  We actually ate the London Broil tonight, but I already had the onion & veggies.  I also made the potato soup earlier in the week.  I had free sour cream, free chicken broth & bacon from the freezer.  Whenever we make bacon, I freeze a few pieces for a quiche or other meal.

Slow Cooker London Broil with Mashed Potatoes

1 Stockman & Dakota London Broil ($2.99lb) $4.99
1 Richfood Frozen Vegetables $1
1/2 Bag of Potato’s $1
    on sale B1G1 or $1.99 each
1 onion ~$0.25
    on sale B1G1 or $1.99 each
Salt/Pepper*

Total: $7.24

Directions:
Brown London broil in pan & place in crock pot.  Season with S/P and add onion (chopped in large pieces).  Cook on low approx. 1 1/2 hours.  Serve with mashed potatoes & vegetable.

Panera’s Creamy Potato Soup

6 Cups potatoes, peeled and chopped (about 1/2 bag) $0.99
     on sale B1G1 or $1.99 each
6 Cups chicken broth $2
     on sale $1 each
     use $1/4 from the 11/14 RP insert
1/2 tsp salt*
1/4 tsp white pepper*
1/4 tsp ground red pepper*
1 (8 ounce) package of Richfood cream cheese $1.50
4 slices of bacon, cooked and crumbled (optional)

Serve with King’s Hawaiian Rolls $1

Total: $5.49
(if purchase bacon, add $3.50)

Directions:
Combine broth, potatoes & spices.  Boil on medium heat until potatoes are tender.  Smash potatoes to release starch for thickening.  Depending on texture you want (smash potatoes more or leave chunky).

Reduce heat to low.  Add cream cheese.  Heat, stirring frequently until cheese is melted.  Serve with bacon crumbles on top, if desired.
