Frugal Eats: Black-Eyed Pea Soup

Frugal Dinner: Black-eyed Pea Soup
 

¾ pound ground beef
1 cup finely chopped onions
One bag frozen black-eyed peas
2 cups beef broth
Two cans diced tomatoes
1/8 teaspoon salt
 
Instructions
 
1. Place a Dutch oven over medium-high heat. Add the ground beef and onions and cook until the beef is browned, stirring frequently.
2. Add the black-eyed peas, broth, tomatoes, and salt; mix well.
3. Bring the mixture to a boil, reduce the heat, and cover tightly. Simmer for 45 minutes.
4. Refrigerate overnight to allow flavors to blend. Reheat before serving.
 
Ideas to make this cheap dinner more appealing or add variety: You can add rotel to this recipe, or green chilies, or substitute salsa for one can of tomatoes. You can add any type of sausage you have or even some ham chunks instead of the ground beef. Serve over rice or with corn bread, or toast.
 
Cost: Ground Beef 1.40, onion.50, peas .90, tomatoes buy add $1, beef broth .50, Rice or cornbread .50 Total Cost: $4.80

Farm Fresh Meal Ideas: London Broil & Creamy Potato Soup

Mom on Dealz & I are trying out providing you with weekly recipes based on the sale ads for local stores.  The following recipes are based on the Farm Fresh sale ad for the week of 01/19/11.  Remember that some of the ingredients listed you may already have in your stockpile, so the cost for the meal would be less. 

This was honestly very difficult for me because I cook first based on what I have, then based on the sale ad.  We actually ate the London Broil tonight, but I already had the onion & veggies.  I also made the potato soup earlier in the week.  I had free sour cream, free chicken broth & bacon from the freezer.  Whenever we make bacon, I freeze a few pieces for a quiche or other meal.

Recipes from Readers: Lazy Lasagna Chili

Lazy Lasagna Chili

1 c. chopped zucchini
1/2 c. chopped onion
1 lb. turkey italian sausage (casings removed)
2 garlic cloves, minced
1 jar spaghetti sauce
2 (14 oz) cans beef broth
1 c. water
1 1/2 c. radiatore or other pasta (I like shells).

1. Brown sausage, garlic and onion.
2. Add spaghetti sauce, broth and water; bring to a boil.
3. Stir in pasta.
4. Reduce heat, simmer uncovered, 7 minutes.
5. Stir in zucchini, cook another 2-4 minutes.

Makes 6 servings
1 serving=1 1/3 c.
6 WW Points per serving

You can sub bell pepper for zucchini.  Add the chopped peppers with onions in step 1.

Frugal Recipe: Mediterranean Fava Bean Salad

Thanks to Budget Savvy Diva for this weeks Frugal Eats recipe, Mediterranean Fava Bean Salad!

Ingredients

  • 1 19 oz. can fava beans, drained ($1.59)
  • 1 15 oz. can black olives, drained ($.99)
  • 1 15 oz can petite diced tomatoes, drained ($.29)
  • 2 Tbsp olive oil ($.20)
  • 1 Tbsp balsamic vinegar ($.10)
  • 1 tsp dried basil ($.05)
  • Salt and pepper to taste

Directions

  1. Empty the beans, black olives and petite diced tomatoes into a mixing bowl.
  2. In a small container with a lid, prepare the vinaigrette by adding the olive oil, balsamic vinegar, dried basil and a little salt and pepper.  Shake vigorously.
  3. Pour the dressing over the bean mixture and toss until evenly coated.
  4. Serve, or chill and then serve.

Homemade Pizza Dough Recipe

I made homemade pizza for dinner last night.  Yummy!  In hindsight, a picture would have been nice.

I used FishMama’s pizza dough recipe.  It yielded approx. 4 pizzas worth of dough.  We used 2 for dinner and I froze the remaining 2 for later use.  The recipe calls for mixing in a bread machine, but I used my new Kitchenaid mixer and it worked great!   I altered the directions based on the pizza dough instructions for my mixer.

1 1/2 cups warm water
1/4 cup olive oil
2 Tablespoons honey
4 1/2 cups flour
1 Tablespoon salt
1 Tablespoon yeast

Dissolve yeast in warm water.  Add remaining ingredients less about 1 cup of flour.  Mix on speed 2 with dough hook attachment for about 2 minutes.  Add remaining flour.  Continue mixing about another 2 minutes.  Place dough in greased bowl, cover and let rise for an hour (or until dough about doubles in bulk).  Punch dough down and make your pizzas!

Frugal Eats: Zucchini Bread

In large bowl beat first five ingredients.
1 C Sugar
1 C Brown Sugar
3 Eggs
1 C Vegetable Oil
1 T Vanilla

Stir in next five ingredients.

3 C Flour
1 T Cinnamon
1 t Salt
1 t Baking Soda
¼ t Baking Powder

Blend in last three ingredients.

2 C Zucchini raw and shredded
½ C nuts {optional}
½ C Chocolate Chips {optional} I have these stored in my freezer from the sales last winter!

Pour into 2 greased and floured bread pans.


Bake at 325° for 50-6o minutes.

Enjoy!
