It’s finally strawberry picking time and that leads to delicious spring and summer treats! This low calorie strawberry smoothie is a perfect way to enjoy all the strawberries you pick or that you can find in abundance at your local stores. When you combine a few simple ingredients with the strawberries, you get a powerful protein drink ask well! I’ve added chia seeds to this recipe, but those are optional or can be replaced with flax seed.

Easy Strawberry Shortcake Recipe {in a Jar}

Easy Strawberry Shortcake Recipe

Strawberry season is here!  Try this easy strawberry shortcake recipe after you hit the strawberry fields.  Putting it in the jar just makes it a bit more fun too!

Easy Strawberry Shortcake Recipe:

Ingredients:

Store bought pound cake, cut into cubes
Whipped Cream (see below)
Fresh Strawberries
Orange zest (optional)

Directions:

Prepare the cake according to the box instructions and bake in a sheet pan (the cake will be thin). Let the cake cool completely.

Homemade Strawberry Whipped Cream

Ingredients:

4 tablespoons sugar
2 cup heavy cream
2 teaspoon strawberry extract
Red food coloring (optional)

Directions:

  1. Place a metal mixing bowl and your beaters in the freezer.
  2. Remove and add the sugar, strawberry extract, and cream to the bowl.
  3. Add a few drops of red food coloring to tint the cream pink. (optional – if you don’t care about the true pink color)
  4. With your mixer on low, beat the cream until it thickens and you have stiff peaks.

To Assemble:

  1. Fill the mason jar (I used 4oz jars) about ¾ of the way full with the pound cake cubes.
  2. Top with whipped cream and fresh strawberries. Repeat with remaining dishes.
  3. Garnish with a bit of orange zest, if desired.
  4. Store in the refrigerator and serve cold.

½ Cup Roasted Red Peppers, diced
2 Roma Tomatoes, Seeded, chopped and well drained
2-3 Chipotle Peppers in Adobo, diced
2 Cloves Garlic, minced
8 Sprigs of Cilantro leaves, minced
4 oz. Colby Jack Cheese, shredded
¼ Red Onion, very thinly sliced
4 8” Flour Tortillas
Salt
Black Pepper
2 Tbsp. Oil
2 Avocados
Salsa

Recipe for Banana Muffins

Take a simple recipe for banana muffins and add a twist by making popovers!  This is the same recipe for muffins but cooked in a popover pan.   Don’t have a Popover Pan?  You can buy one HERE or just use this recipe to make muffins.

The caramel icing topping adds a fun sweetness to the muffins that can be omitted if you prefer.

Recipe for Banana Muffins as a Popover:

Ingredients:

4 Ripe bananas
1 2/3 Cups of sugar
2/3 Cup vegetable oil
2 1/2 Teaspoons vanilla
4 eggs at room temperature
3 1/4 Cups All-purpose flour
1 Tablespoon baking powder
1 pinch of salt
1 1/4 Teaspoons cinnamon
Hershey’s Caramel Topping
1/2 Cup Vanilla icing, melted

This quick simple pasta salad recipe is perfect for Spring and Summer potlucks, barbeques, lunches, and makes a great side for dinner any night of the week.

For a large gathering I would make at least a double batch, and trust me you will be bringing home and empty bowl. It truly has the flavors of the classic, favorite sandwich with a twist. I have been known to reserve a portion to eat as my own lunch the next day.

For a lighter version-substitute plain Greek yogurt for mayonnaise and some of the ranch, reduce bacon to 4 pieces, and cut cheese in half.

Fast and Easy Banana Bread


We love banana bread!  It’s one of those foods that needs to be in every recipe box.  Try my fast and easy banana bread recipe for your next meal.  It will be perfect for breakfast, snack time or as a great side for dinner.

When I make this fast and easy banana bread recipe, I always make a double batch.  The kiddos eat is so fast, why make just one?  It also freezes well, so you can eat one now and freeze one for later.

Fast and Easy Banana Bread Recipe:

Ingredients:

1 Stick Butter, room temperature
3/4 Cup Sugar
2 Eggs
1 Cup Flour
1 Cup Whole Wheat Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1 tsp. Vanilla
3 Ripe Bananas
1/2 Cup Walnuts, chopped (optional)
1/4 Cup Semi-Sweet Chocolate Chips (optional)

Directions:

  1. Preheat over to 350°F.
  2. Cream butter and sugar until fluffy then add eggs.
  3. Combine flours, baking soda and salt in a separate bowl then sift into creamed mixture.
  4. Mix in vanilla.
  5. Mix in bananas until well combined.
  6. Add in walnuts and chocolate chips and mix until well combined.
  7. Bake in a greased pan for 50 minutes or until done.
