Watermelon & Prosciutto Salad Recipe #EEinNYC

Edamame & Spinach Dip was the first recipe we made for dinner at “Home Cooking New York” during the SUPERVALU Essential Foods for Every Season Event.  As it turns out, just about everything in the meal included ingredients that I either don’t like or have never tried.  Surprising to most people, I’m not a fan of Watermelon (gasp).  However, it actually works well in this salad.  My family are all huge watermelon fans, so this is another dish that will make it to our dinner table.

Watermelon & Prosciutto Salad

Active Time:   15 minutes
Total Time:  15 minutes
Amount:   6 servings

Ingredients:
1 (5 ounce) package baby arugula leaves
4 cups cubed seedless watermelon
1 (3 ounce) package Culinary Circle® Prosciutto Slices, cut into ½-inch pieces
1 shallot, sliced
1 cup Essential Everyday™ Pine Nuts, toasted
½ cup Culinary Circle Crumbled Reduced Fat Feta Cheese
¼ cup Essential Everyday Light Balsamic Vinaigrette

Directions:
In a large salad bowl or mixing bowl, combined all ingredients.
Gently toss to coat; salt and pepper to taste.
Serve immediately.

Edamame & Spinach Dip Recipe #EEinNYC

After snacking on Shrimp Tacos with Mango Avocado Salsa & Veggie Pita Pizza Snacks we started cooking our dinner at “Home Cooking New York” during the SUPERVALU Essential Foods for Every Season Event.  This was my first time eating Edamame and I was a bit apprehensive.  The Edamame & Spinach Dip turned out to be delicious, so I will be making this one again!

Edamame & Spinach Dip

Active Time:   15 minutes
Total Time:  15 minutes
Amount:   4 cups

Ingredients:
1½ cups Essential Everyday™ Frozen Shelled Edamame, thawed
1 (10 ounce) box Essential Everyday Frozen Chopped Spinach, thawed, well drained
1 cup Essential Everyday Light Sour Cream
1 cup plain Greek yogurt
½ cup chopped green onions
1 (1.4 ounce) packet dry vegetable soup mix
⅛–¼ teaspoon cayenne pepper
– pita chips

Directions:
Place edamame in food processor or blender; process until finely chopped.  Add spinach; continue processing until well combined.  Transfer to large bowl.
Add sour cream, yogurt, onions, soup mix and cayenne.  Mix until well combined; salt and pepper to taste.
Serve with pita chips.

Veggie Pita Pizza Snacks Recipe #EEinNYC

The 2nd appetizer we ate while chatting before cooking our dinner at “Home Cooking New York” during the SUPERVALU Essential Foods for Every Season Event was Veggie Pita Pizza Snacks.

This recipe is great for a summer.  It’s light, creamy and topped with fresh veggies.  A tip we suggested during the trip is to try toasting the pitas before assembling.

Veggie Pita Pizza Snacks

Active Time:   20 minutes
Total Time:  20 minutes
Amount:   8 servings

Ingredients:
1 cup Essential Everyday™ Fat Free Cottage Cheese
½ (8 ounce) package Essential Everyday Neufchâtel Cheese, softened
½ (1 ounce) packet Essential Everyday Dry Ranch Seasoning Mix
4 whole wheat pitas
1 cup Essential Everyday Fancy Shredded Reduced Fat Sharp Cheddar Cheese
4 cups fresh veggies (shredded carrots, chopped broccoli, chopped cauliflower, chopped red and yellow bell pepper, shredded zucchini)

Directions:
Combine cottage cheese, neufchâtel cheese and ranch seasoning mix in a food processor or blender.
Purée until well combined and smooth.  Spread over pitas.
Top with shredded cheese and veggies.  Cut each pita in quarters.

Shrimp Tacos with Mango-Avocado Salsa Recipe #EEinNYC

While waiting to start cooking our dinner at “Home Cooking New York” during the SUPERVALU Essential Foods for Every Season Event, we ate Shrimp Tacos with Mango-Avocado Salsa.  I gotta say, this was definitely one of my favorites!

Shrimp Tacos with Mango-Avocado Salsa

Active Time:   25 minutes
Total Time:  1 hour
Amount:   4 servings

Ingredients:
¼ cup olive oil
¼ cup water
1 (1 ounce) packet Carlita® Fajita Seasoning Mix
1 pound uncooked shrimp, peeled and deveined
1 cup diced mangoes
½ cup chopped red onion
1 fresh jalapeño pepper, seeded and diced
1 ripe avocado, peeled, pitted and diced
½ cup Carlita Salsa Verde
– bamboo skewers, soaked in water 30 minutes
8 (6-inch) Carlita Flour Tortillas, warmed
– crumbled Mexican Cotija cheese

Directions:
In large bowl, combine oil, water and fajita seasoning mix.  Add shrimp; toss to coat.  Let stand 30 minutes.
Meanwhile, in medium bowl combine mangoes, onion, pepper, avocado and salsa.  Toss to coat; salt to taste.  Set aside.
Prepare grill to medium heat.  Place shrimp on skewers; discard marinade.  Grill shrimp, turning once, until cooked through and opaque (about 8-10 minutes).
Remove shrimp from skewers and place in tortillas.  Top with salsa and cheese.

Tip:  Jarred mangoes found in the produce section work great for this recipe.

Mock Mojitos Recipe #EEinNYC

I mentioned last week that I was in New York for the SUPERVALU Essential Foods for Every Season Event.  I had an incredible time meeting with the SUPERVALU team, tasting Essential Everyday products (the new “generic” brand for SUPERVALU stores such as my local Farm Fresh) and hanging out with other bloggers from across the United States.

While in New York, we headed to “Home Cooking New York” for dinner.  This was my first experience at a Home Cooking party.  To be honest,  I was a bit apprehensive.  First, I am only a mediocre cook. Second, I was cooking in front of/with a group of mostly strangers.  It turned out to be a wonderful experience!  Stepping out of my comfort zone is a good thing!!!     It was a great way to get to know the other members of the group and to learn a few cooking tips.  For instance, I have been using my knife wrong for years!!!

I have a ton of recipes to share with you over the coming days.  First up was our beverage, Mock Mojitos.  This yummy drink can be substituted with alcohol if you prefer.

Mock Mojitos

Active Time:   10 minutes
Total Time:  10 minutes
Amount:   4 servings

Ingredients:
1 (0.75 ounce) package mint leaves, stems removed
2 tablespoons Essential Everyday™ Granulated Sugar
3 cups reconstituted Essential Everyday Frozen Limeade
1½ cups Super Chill® Club Soda
– ice cubes

Directions:
Roughly chop mint leaves and place in a 2-quart pitcher; add sugar.
Using a muddler or spatula, vigorously press mint and sugar together until well combined (muddling).
Add in limeade and club soda; stir to combine.  Fill pitcher with ice; stir.

Mandarin Orange Cake Recipes

This cake is great for parties or picnics.  It’s simple to make (I can even do it) and is a real crowd pleaser.  Most of these ingredients can be found for a great price if you watch the sales.  I was able to make this Mandarin Orange Cake for around $3 without a cake mix coupon!

Mandarin Orange Cake

 

Ingredients:

  • 1 Package (18 1/4 oz.) White Cake Mix
  • 2 Eggs
  • 1/3 Unsweetened Applesauce (1 Snack Size Cup)
  • 1 Can (11 oz.) Mandarin Oranges, undrained – – Reserve 4-5 Oranges for Garnish
  • 1 Carton Cool Whip
  • 1 Can (8 oz.) Crushed Pineapple, undrained
  • 1 Package (3.4 oz.) Instant Vanilla Pudding Mix

Directi0ns:

Cake Mix

  1. In bowl, combine cake mix, eggs, applesauce and oranges.
  2. Beat on low for 30 seconds; beat on medium for 2 minutes.
  3. Pour into 2 greased and floured 9-in round cake pans.
  4. Bake 325 degrees for 30 minutes or until done.

Frosting

  1. Mix pudding and pineapple together.
  2. Add cool whip until mixed well.
  3. Spread on Cake and chill.
  4. Add garnish.

Keep cake refrigerated.

Easter Cross Cake

Looking for an Easter Cake?

A cross is a simple cake to make for your Easter celebration.

  • Bake a sheet cake in the flavor of your choice
  • Remove cake from pan and cool
  • Level cake (if necessary) by trimming any “bumps” with a sharp knife
  • Mark and cut the sheet in the form of a cross, set aside excess
  • Decorate with colors of your choice

We used white icing with a star tip facing straight down to decorate a majority of the cake.  In order to give the cake more definition, we used blue icing (again with a star tip) around all the edges and along the bottom of the cake where it meets the cake board.
