I’m always on the hunt for easy meals once school starts.  Between homework and after school activities, 5pm can sneak up on me.  Try this easy homemade sloppy Joe’s recipe for a tasty and delicious meal the kids will LOVE.  Spice things up and make it a little interesting with a Sloppy Jose twist on a traditional sloppy Joe’s recipe.

Ingredients

1 lbs. Ground Beef
1 Bell Pepper, red, yellow or orange, chopped
1⁄2 Red onion, diced
2 cans Diced Tomatoes
1 pkg. Taco Seasoning
4-6 slices Texas Toast
1 Cup Shredded Cheddar Jack Cheese
6-8 stems worth of Cilantro

Homemade Yummy Spinach Ricotta Dip Recipe

Each week I plan out my meals based on the sale ads, and many times I end up with a lot of left over products, like ricotta cheese. I use it whenever I make lasagna, but I don’t use the entire container.    Instead of wasting the last of the ricotta, I make this awesome yummy Spinach Ricotta Dip for the family to munch on while I make dinner or to enjoy on a lazy Sunday afternoon.

Sometimes leftovers in the refrigerator turn out to be the best tasting meal, besides just being a great way to use up leftover ingredients. This Homemade Yummy Spinach Ricotta Dip Recipe is a delicious hot dip to bring out for a crowd while watching a football game, to serve at your next bridal or baby shower, or even at brunch.

Loads of flavor and texture make it perfect for dipping chips or to spread on a buttery cracker.

  • 1 cup Ricotta
  • 4 oz. cream cheese
  • 8-10 oz. frozen spinach
  • 1 cup shredded mozzarella
  • 2 cloves garlic, crushed
  • salt and pepper to taste

Directions:

  1. Thaw frozen spinach completely.

  2. Combine ricotta, cream cheese, spinach, mozzarella, garlic, salt and pepper until thoroughly mixed, if desired place in mixer or food processor to make it a more smooth.

  3. Place mixture in an oven safe dish and bake at 350° for 20 minutes or until top is golden and creamy texture.
  4. Brown and dip is heated throughout.
  5. Serve with tortilla chips, pretzels, or crackers.
  6. Try spreading in a tortilla to roll up.

Are you looking for a great dip to put out for the football game, bring to the next family get together, or at game night? This easy Guacamole Dip recipe is a perfect compliment to chips or for topping nachos or tacos. You can mix this by hand if you like a chunkier version, but I enjoy a smooth and creamy guac to dip my chips (preferably lime Tostitos).

This will quickly become a party favorite and will put you at the top of the guest list every time (if you promise to make your homemade guacamole that is). Grab your ingredients and get ready to mix up a bowl of yummmmm!

Easy Guacamole Dip Recipe:

Easy Guacamole Dip Recipe 1

Ingredients:

1 large avocado
2 Tbsp. chopped cilantro
1⁄2 cup rotel diced tomatoes with chiles, drained
1⁄2 cup sour cream
1⁄2 finely diced onion
1⁄2 lime
2 cloves garlic, crushed
salt and pepper to taste

Directions:

  1. To slice avocado- slice avocado all the way around, twist, pull apart, and remove pit. Scoop out all inside green flesh and put into bowl of hand held or stand mixer- using the paddle
    attachment.
  2. Squeeze 1⁄2 lime into bowl.
  3. Stir in cilantro, sour cream, rotel, garlic and onion.
  4. Whip with mixer until smooth and creamy.
  5. Place in refrigerator for at least a half an hour before serving to allow flavors to combine.
  6. Top with a pinch of fresh cilantro before serving.

Mexican Chicken in Crockpot Recipe

Slow Cooker Mexican Chicken

Are you looking for an easy and budget friendly slow cooker meal?  Try this Mexican Chicken in Crockpot that is sure to please everyone in your home.

Mexican Chicken in Crockpot:

Ingredients:

2 – 4 Chicken Breasts (preferably skinless/boneless)
1 jar Salsa
1 can Black Beans (drained)
1 can Corn (drained)

Directions:

  1. Place chicken breasts in slow cooker and top with salsa, black beans & corn.
  2. Cook on low 3 – 4 hours until chicken is tender.
  3. Shred chicken, stir, and cook an additional 30 minutes.
  4. Top with cheese and serve over rice (optional).

Turn this Mexican Chicken in Crockpot recipe into a 2nd meal by using the chicken mixture in a burrito and topping with cheese.  Burritos can be frozen for a quick and easy lunch or dinner.

*Can also use frozen beans and corn.

You could also serve Cherry Cheesecake Swirl Brownie for dessert.

The BEST Whipped Cream Cheese Frosting!

Are you looking for the cream cheese icing recipes?  Then you have to give this a try!  In my opinion, it is the BEST!!!  Of course I would think so.  It’s my own recipe!  😮  I don’t like my frostings overly sweet so I played around with my ingredients until I found the right amount of sweetness with the tang of the cream cheese.  This recipe is versatile so you can change it up to your likeness.  If you want it sweeter add more sugar and decrease the cream cheese.  If you want a stronger cream cheese flavor then decrease the amount of sugar.

This is a very quick and easy recipe.

Whipped Cream Cheese Frosting

Ingredients:
1 Cup Butter (2 sticks), room temperature (You can use salted or unsalted.  I prefer salted)
3 Packages (8 oz) Cream Cheese, room temperature
5 Cups Confectioner’s Sugar, sifted (Sift after measuring)
3 tsp Clear Pure Vanilla Extract

Instructions:
In the bowl of an electric mixer, with paddle attachment, beat butter at medium-high speed until light and fluffy, about 2 minutes.
Add the cream cheese and beat until fluffy and thoroughly mixed, about 2 minutes. Scrape sides of bowl as needed.
Add vanilla and beat about 30 seconds.
Gradually, about 1 cup at a time, add the confectioner’s sugar and beat about 4-5 minutes.

***Store in an airtight container in the refrigerator for up to a week.  Beat in the mixer for 1-2 minutes before using.

***NOTE*** This will not be a pure white frosting due to the butter. It will be a slightly off-white color.  If you need it to be white then look for a butter that is almost white in color.
